Why Does Lemon Juice Taste So Sour?

What Crafty Clover says in this video

Intro

Hi there, curious minds! I'm Crafty Clover! Let's discover something amazing. Why does lemon juice taste so sour?

The Big Idea

Lemon juice tastes so sour because lemons are packed with citric acid! Acid switches on sour receptors on your tongue. It is a zingy warning and a big flavor punch, and kids often make a silly pucker face.

Citric Acid

Step one: lemons hold acid. A lemon is full of citric acid, and a lemon has far more of it than an orange does. That is why lemon juice is so tart.

Sour Receptors

Step two: your tongue notices. Your tongue has special sour-sensing cells that react to acid. They are tiny sensors that spot the sour acid in your food.

Brain Says Zing

Step three: your brain says, whoa. The signal races to your brain, and your face may scrunch up. Sour can warn that food is unripe, so your brain pays attention.

A Closer Look

Let's take a closer look! A lemon is very sour. An orange is sour too, but milder, and sweeter. An apple has some acid, but it is usually the mildest. And more acid usually means a bigger sour face.

Quick Facts

Quick facts! Sour often means acidic, like vinegar and unripe fruit. Sugar balances sour, which is why lemonade needs sweetener. Citric acid is named after citrus fruits. Check with a grown-up about allergies before tasting, and never taste unknown things.

Think Like a Scientist

Now, think like a scientist! With a grown-up's okay, try a tiny bit of lemon, orange, and apple. Rate each sourness from 1 to 5. Which one is the sourest? Skip anything you are allergic to.
