Book 27, Question 55
How does maple syrup turn into maple sugar?
Maple trees give sap that is mostly water.
Syrup makers boil it down until it is thick, taking about forty buckets of sap for one of syrup. If the syrup is heated more and stirred, the sugar starts forming tiny crystals, making maple sugar or soft maple butter. Canada makes most of the world's maple syrup, and Quebec makes the most of all.
