Intro

Hi there, curious minds! I'm Crafty Clover! Let's discover something amazing. Why does sourdough smell tangy?

The Big Idea

Sourdough smells tangy because wild yeast and lactic acid bacteria ferment the dough! They make acids and complex aromas. Tang is fermentation's signature.

Wild Microbes

Step one: wild microbes move in. A sourdough starter is flour and water that catches wild yeast and friendly bacteria from the air and the flour. Bakers feed it flour and water every day, and it grows bubbly and alive, like a pet.

Yeast And Bacteria

Step two: yeast and bacteria work together. Yeast makes gas bubbles that make the dough rise. Lactic acid bacteria make acids, mainly lactic acid and a little acetic acid, which are sour.

Tangy Aroma

Step three: the tang develops. The longer the dough ferments, the more acids and aroma compounds it builds. That gives sourdough its sharp, tangy smell and flavor, and a chewy crust.

A Closer Look

Let's take a closer look! The starter is kept in a jar. Wild yeast lifts the dough with gas bubbles. Friendly bacteria make the sour acids. And together they make tangy bread.

Quick Facts

Quick facts! Some sourdough starters are decades or even a century old. Baking kills the microbes, so the bread is safe to eat. Sourdough ferments slowly, usually for hours. Wash your hands, and keep your face out of the jar.

Think Like a Scientist

Now, think like a scientist! With a grown-up, sniff a sourdough starter in a closed jar. Open it gently and take a short sniff. Then sniff commercial yeast dough and compare. Do not taste raw dough.

Outro

Sourdough is a loaf made by a microbe team. Science is amazing! Crafty Clover can be found on Amazon Books, Google Bookstore, and Apple Books. Available for purchase or download! Bye for now!
