Intro

Hi there, curious minds! I'm Crafty Clover! Let's discover something amazing. Why does gluten matter in wheat bread?

The Big Idea

Gluten matters in wheat bread because it is the stretchy protein mesh that gives bread structure! Without it, loaves would not hold their bubbles. They would collapse into crackers.

Wheat Proteins

Step one: wheat has gluten proteins. Wheat flour contains two kinds of proteins that join when they get wet. Together they make gluten, a word that comes from the Latin for glue, because it is so sticky.

Stretchy Mesh

Step two: gluten makes a mesh. In dough, gluten forms a stretchy net that can stretch without tearing. It is like a thin rubber trampoline stretching around each bubble, bouncing back when pushed.

Holds The Loaf

Step three: the loaf holds its shape. Gas from yeast pushes on the net, and the net holds the gas in. In the oven, heat sets the net, so the loaf stays tall and airy.

A Closer Look

Let's take a closer look! Wheat flour contains gluten proteins, and it is the main flour in most bread. Adding water wakes them up. They form a stretchy net. And the net lets the loaf rise tall.

Quick Facts

Quick facts! Rye and barley contain gluten too. Bread flour has more gluten than cake flour. Cakes are tender because their flour makes less gluten. Some people cannot eat gluten, so never share food without asking a grown-up.

Think Like a Scientist

Now, think like a scientist! With a grown-up, make a ball of flour dough and rinse it under a stream of water. The white starch washes away. Feel the leftover gluten gum. Wash your hands, and do not eat it.

Outro

Gluten is the dough's trampoline. Science is amazing! Crafty Clover can be found on Amazon Books, Google Bookstore, and Apple Books. Available for purchase or download! Bye for now!
