Intro
Hi there, curious minds! I'm Crafty Clover! Let's discover something amazing. Why does honey turn grainy and hard in the jar?
The Big Idea
Honey turns grainy and hard because some of its sugar slowly lines up into crystals! Honey is mostly sugar with very little water. It is still honey, and gentle warmth melts the crystals again.
Packed With Sugar
Step one: honey is packed with sugar. Bees make honey from flower nectar, and honey is about 80 percent sugar. There is only a little water to hold all that sugar.
Crystals Grow
Step two: sugar crystals start. One of honey's sugars, called glucose, does not stay dissolved well. It slowly lines up into tiny crystals, like a seed that grows.
Warm It Gently
Step three: warm the jar gently. Gentle warmth lets the crystals dissolve back into the honey. A grown-up should never use very hot water, because it can change the flavor.
A Closer Look
Let's take a closer look! Fresh honey starts out runny and golden. Over time, sugar crystals form and make it grainy. A warm water bath loosens them. And the honey is smooth again.
Quick Facts
Quick facts! Honey that is very sugary or raw often crystallizes sooner. Crystallized honey is perfectly safe, and some people love it spread thick. Babies under one year old should not eat honey, so ask a grown-up. Use warm water, not boiling, and let a grown-up help.
Think Like a Scientist
Now, think like a scientist! Ask a grown-up to set a jar of grainy honey in a bowl of warm water. The water should be warm, not hot. Watch the crystals slowly melt away. Check it again after a little while.
Outro
Grainy honey is still honey, just with sugar crystals. Science is amazing! Crafty Clover can be found on Amazon Books, Google Bookstore, and Apple Books. Available for purchase or download! Bye for now!
