Why Refrigerate Leftovers Promptly?
We refrigerate leftovers promptly because warm food gives bacteria a chance to multiply fast! The temperature range where they grow best is called the danger zone, so leftovers should go in the fridge within about two hours. Quick cooling helps keep tomorrow's lunch safe.
