Book 27, Question 58

Why do some salts look like flakes or pyramids?

When salt crystallizes from a quickly evaporating pool of brine, crystals start on the surface and grow outward into hollow pyramids that float.

They are called flake salt and are light and crunchy. Table salt grows in tanks and has dense little cubes. The shape depends on how and where the crystals grow. Cooks like flakes for a crunchy finish on food.
