Book 27, Question 53
Why does thawed and refrozen ice cream get gritty?
Good ice cream is full of very tiny ice crystals, which feel smooth on your tongue.
When ice cream warms and freezes again, the small crystals melt and join into larger ones that feel gritty. Ice cream makers keep crystals tiny by freezing the mix while churning it, and by adding fats, sugar, and air that get in the way of crystal growth.
