Which vegetables are really roots?
Carrots, beets, radishes, turnips, parsnips, and sweet potatoes are all storage roots. The plant stores sugar and starch in them to use later, such as when it flowers. People eat them for the same reason: they are full of energy. Potatoes and onions are not roots, though.
